The restaurant serves what I’d call elevated Dutch cuisine — familiar flavors but executed with real skill. They source a lot locally, which makes sense given all the farms around Ermelo, and the seasonal menu changes keep things interesting if you’re staying multiple nights. The dining room overlooks the gardens, and there’s something really satisfying about watching the horses in the paddock while you’re having dinner. Service is attentive but not hovering, which strikes exactly the right note for this kind of place.
